A Bouquet Garni is a selection of herbs, similar to
Herbs de Provence. It is used to add aromatic flavors when preparing soups, stocks and various stews. The bouquet is boiled with the other ingredients, but is removed prior to consumption.

There are two ways to get the bouquet garni into and then easily out of your stock. Either place the ingredients into a sachet or cheesecloth bag or wrap the ingredients using a section of leek. Chop a five inch length of leaf from the green end of a leek. Lay the bouquet garni ingredients inside the fold of the leek and tie it tightly with kitchen string. Add it to your stock.
Once the stock is complete, remove the bouquet and discard.
