Chashu (Soy Pork for Ramen)

This is a typical dish to serve with Ramen. By itself it's great with Japanese mustard, wilted spinach and rice.
Serves 6 for ramen, or 4 as part of a larger meal
  • 1
    lb pork belly
  • 3-4
    cloves garlic
  • 1
    oz ginger (about a 2 inch stick)
  • 1
    tsp salt
  • 2
    tbsp sake
  • 2/3
    cup soy sauce
Cut the skin off the pork belly. Slicing across the grain, cut into four to six strips. Lay the strips in a frying pan large enough to hold them in a single layer without too much overlapping. Add the remaining ingredients. Place over medium heat, bring to a boil and simmer for 40 minutes.

Remove from heat and allow the pork to cool in the sauce. Both the pork and the broth can be used in the ramen so be sure to keep both.
