This garlic paste is a great condiment to serve with Ramen.
Makes 1/4 cup
  • 2
    oz pork fat, cut from a slab of pork belly or similar
  • 6
    cloves garlic
  • 4
    tbsp vegetable oil
Add the pork fat and garlic to a food processor and chop until a smooth paste forms.

In a small pan, heat the oil over medium heat. Add the garlic paste and fry until the paste just starts to take some color. Remove from heat and transfer to a container. With an airtight lid, the paste will keep in the refrigerator for a few weeks.
