Green Salsa with Avocado

This is the salsa to make when you need guacamole as a sauce to accompany other main dishes or to put on tacos. The addition of avocado makes this a smooth and creamy salsa that is not overly spicy. It's a great addition to fish and seafood dishes.
Makes 1 1/2 cups
  • 1
    large avocado
  • 4
    small tomatillos, without casing
  • 1
    jalapeno or serrano, without stem
  • 1/4
    small onion, rough chopped
  • lime juice from 1 lime (about 1 tbsp)
  • 3/4
    tsp salt

To a blender add all ingredients except the lime and salt. Add 1/4 cup water and blend until smooth. Transfer to a bowl. Add lime juice and salt to taste.

Despite the presence of avocado (notorious for going brown), this salsa will keep covered in the refrigerator for a few days.

Variation To mix it up a bit, blend in around 1/4 cup loosely-packed cilantro leaves.
