Limes are a member of the citrus family and are more acidic than most. Used in cuisines worldwide, they add a brightness to dishes, especially when their juice is squeezed over food at the end of cooking. There are many different types of limes, each having subtly different flavors.
EditPersian lime
This is the variety commonly grown and sold in the U.S. About two inches in diameter, it is one of the bigger varieties of lime. Persian limes are more tart and less sweet than key limes.
EditMexican limes (Key Limes)
About one inch in diameter, these are the limes used in Mexican cooking. They are very aromatic and sweeter than other varieties of lime. They are a favored ingredient in many classic dishes and cocktails from key lime pie to
margaritas.
EditKaffir lime
Common to Southeast Asia, these limes are just under two inches in size and are distinguished by their wrinkled bumpy skin. This lime is prized for its flavorful rind as well as its aromatic leaves.
