A rich sauce of Mexican origin made from chilies, nuts, seeds, fruits and sometimes chocolate. These ingredients are traditionally ground into a thick smooth sauce. Moles are made with many different ingredients and come in a wide variety of colors from yellow to green, red and black.

Moles can be bought powdered, concentrated or in jars of ready-to-use sauce. Many moles are traditionally served over chicken or pork, or can be combined with shredded meat and used as stuffings in items such as tamales.
