A bowl of pickled red onion
Quick pickled onion goes well with many dishes from the Yucatan such as Pibil.
Enough to accompany a meal for 4 people
  • 1
    medium red onion
  • 1/4
    tsp salt
  • 1/4
    cup lime juice (about 2-3 limes)
  • 2
    bay leaves
Cut off the top and bottom of a red onion. Slice in half from the top down through the bottom. Lay one half of the onion flat on a chopping board, cut side down. Finely chop into thin slices about 1/8 inch in thickness, again slicing from top to bottom.

Add the onion to a non reactive bowl, and cover with 1/4 teaspoon of salt, lime juice and bay leaves. Allow to sit for one hour to pickle.

Once pickled, the onions will turn bright pink.
