This is in essence a Mexican take on fondue. Melted cheese with chorizo sausage that you scoop straight from a sizzling pan and into your tortillas. It is very easy to make and fun to share.
The choice of cheese is important. I like to use
queso Chihuahua, a soft and slightly tangy melting cheese from the mountain regions of Chihuahua, Mexico. If you can't get that, Monterey Jack will do just fine.
Makes enough for 4-6 people

Cheese, onions and chorizo - the building blocks of queso fundido
Place a small heavy bottomed frying pan over medium-high heat. Add the chorizo and onion and fry until the onion is softened and the chorizo is well browned.

Frying the chorizo and onion. For this task, a small cast iron skillet is best. Mine is in storage, but I am not letting that stop me - queso fundido is too good for that.
If you don't want to serve straight from the frying pan, or your frying pan cannot handle the oven, transfer the chorizo and onion to a small oven proof serving dish.
Sprinkle the cheese on top of the mixture. Heat in the oven or under the grill for a few minutes until the cheese is just melted.
Place the queso fundido on the table with warm flour tortillas and a freshly made salsa such as
sesame and chili seed salsa or
salsa picante. Let people make their own tacos at the table.
