Serves 4 people

    cup white beans
  • 1/2
    onion, cut in 2
  • 3
    bay leaves
  • 1
    quart water
  • 1
    tsp salt
  • 2
    tbsp cilantro finely chopped
  • Fresh ground black pepper
In a medium pot, add the beans, onion, bay leaves, and water. Bring to a boil. Reduce to a simmer and cook about 90 minutes until tender. If the water evaporates too quickly and the beans start to run the risk of boiling dry, add more water back to the original level.

Near the end of cooking, add the salt. Once cooked, pour off enough of the water until the beans are barely covered. At this point, the beans can be cooled and refrigerated until ready to be served.

If the beans are cold, reheat them. Add the cilantro and season with salt and pepper to taste. Serve immediately.
